We’re not avid viewers, but my husband does keep up with his favorite teams in all sports…my job? supplying the Game Day treats, apparently, he thinks I’m working the concession stand!
Engrossed in the game and his teams’ performance, I know the food isn’t the star of this event for him, but it is for me. I’ve been on a back-to-health journey, and this gluten-free, low carb, low fat and low-calorie treat is perfect.
Easily made?
You bet…and that’s the first WIN on the scoreboard!

Bacon Cheddar Jalapeno Poppers
Equipment
- 1 cutting board
- 1 knife
- 1 medium size bowl
- 1 fork
- 1 baking sheet pan
- 1 skillet
- 1 oven
Ingredients
- 5 strips bacon can use packaged bacon bits as a substitute
- 6 jalapeno peppers
- 3 ou cream cheese softened
- 1/4 C Cheddar Cheese shredded
- 1/4 tsp. garlic powder
Instructions
- 1. In a skillet over medium heat, fry the bacon until crispy. Set aside to cool and drain grease off with a paper towel. When cool, chop into small pieces.
- 2. Preheat the oven to 400* F. Line a rimmed baking sheet with parchment paper.
- 3. Slice the jalapeno peppers in half lengthwise. Use a spoon to scrape out the seeds and membranes. (If you prefer spicy food add the seeds and chopped membranes into the cheese sauce.)
- 4. In a medium-sized bowl, use a fork to combine the cream cheese, cheddar cheese, garlic powder and bacon bits. Spoon some of the mixture into each jalapeno half and set the peppers cheese-side up on the lined baking sheet. Bake for 18-20 minutes, until the cheese is melted and slightly crisp on top.

Note: I think they taste best when they’re still warm from the oven and the cheese is still creamy.
